- Sprinkle Yalelo’s Original Spice on both sides of your fish and rub it in, including the inside of the fish.
- Make two sharp incisions on both sides of the fish to ensure even cooking.
- Transfer the seasoned fish into a hot pan with sizzling oil.
- Fry the fish for 3 minutes on each side.
- Transfer the fish to a baking dish or a cast iron pan.
- Layer the tomatoes, onions, ginger and garlic around and on the fish. Spread evenly.
- Pour your pre-made sweet and sour sauce and sprinkle with chives.
- Transfer the baking dish to a preheated oven at 200 degrees and cook for 15 minutes.

In a bowl, mix 1 cup tomato paste, ¼ cup sugar, ¼ cup white vinegar, 2 teaspoons oyster sauce, and 2 teaspoons soy sauce.
