Sweet and Sour Mabuyu Fish
This recipe is not only delicious but also includes a local superfood! Health and tasty!
Make 3 slits into you Fresh Yalelo Fish.
Stuff Slits with 2 teaspoons of freshly chopped garlic.
Sprinkle one teaspoon of salt and mixed herbs.
Place fish in hot nonstick pan with quarter cup of oil, Flip over after 7 mins and repeat.
Place fish in a nonstick baking pan. Drizzle quarter a cup of oil over fish and put in a preheated oven at 180 Degrees Celsius to bake.
Mabuyu Sauce:
Pour ¼ cup of oil in hot pan, 2 whole red onions and 1 teaspoon of chopped garlic.
Add 1 red and 1 yellow pepper, add ½ teaspoon of mixed herbs and season to taste with salt and stir.
Add one cup of tomato paste and 3 tablespoons of honey and 3 table spoons of Baobab powder. Mix well.
2 cups of fresh water and fresh herbs, let simmer for 10 mins
Take fish out of oven and pour lovely sauce over the fish and enjoy!
